Kimchi is a traditional Korean dish of fermented chili peppers and vegetables. Traditionally, it was fermented in pots buried in the ground, to serve as a winter subsistence staple when fresh vegetables were not available. Nowadays, it is served with most regular meals (Suwon, 2006)
